On Tuesday 2 March, I presented a tasting of Prosecco Superiore sparkling wine bases to some specialized journalists for the Conegliano-Valdobbiadene Prosecco Superiore DOCG Consortium. The event took place at the Salis Ristorante Enoteca in Valdobbiadene.
We tasted 7 areas: Conegliano (Calpena), Refrontolo, Solighetto, Farra di Soligo Col San Martino, San Pietro di Barbozza, Cartizze.
The tasting did not have as the only objective the qualitative judgment of the base, as it is not a finished product, but also that of its projection as a sparkling wine, therefore with that olfactory baggage increased by refermentation and with a gustatory aspect completely modified in the alcohol values , sugars, pH and carbon dioxide produced by yeast.
Interesting sensory journey that has highlighted the character and the different potential of the individual territories.
